Summer in the south will bring forth some serious surplus from neighbor's gardens. My Nana always made the best crowder peas that came from Paw-paw's garden. So, when I was given some crowder peas fresh from the garden, I decided that I would try to cook them up southern-style.
Garden Fresh Crowder Peas
3 strips raw bacon, diced 
1/2 large onion, diced
cajun seasoning
1 TBS minced garlic
1 cube chicken boullion
2 cups or so fresh, shelled, rinsed crowder peas
1 1/2 cups water
Saute the bacon in a medium large, heavy bottom pot. After a few minutes, add onions. Cook on medium until onions soften. Add cajun seasoning to taste. Stir to incorporate, scraping up the bacon drippings that stick to the bottom of the pan. Add garlic an boullion, stir well. Let simmer a minute. Add crowder peas and stir well. Add water and cover. Let simmer about 10 minutes or until liquid is opaque. Remove lid and let simmer another 20-30 minutes or until peas are soft and liquid has reduced almost to a gravy.
Excellent with grilled pork chops.

I don't use as much bacon but otherwise this is my favorite recipe for peas. We are having this tonight with skillet grilled pork chops, fresh corn on the cob and cornbread.
What a wonderful recipe! We loved it. Didn't have the cajun spices so substituted ground Serrano chili peppers (2 pinches) and it turned out fabulous!
This is by far the best recipe for peas. I have not tried it with ground chili pepper, that sounds delicious!

This makes really good crowder peas while staying easy enough to keep it enjoyable. I used 3-4 pieces of bacon, only chopped them in half (and crumbled when finished, eating about half). I poured out a lot of the grease as I wanted to save some for fried green tomatoes. Used a Vidalia onion and homemade chicken unsalted chicken stock (2 cups)in place of the water. I'm used to the crowders being cooked for a longer period of time so I let them simmer on very low for about an hour and a half, adding a cup of water about half way through when they started getting too dry. I did not even mince the garlic, just crushed it quite well with my chef's knife and meat hammer. It was kind of cool because after the long simmer the onion and garlic has kind of disintegrated perfectly into the beans, giving them a perfect note of sweetness as I had let the onions caramelize just a little.
