This is sooo much better and healthier than the dreaded frozen pizza, and super quick too! I usually pick up a rotisserie chicken from the grocery store for dinner one night, then use the leftover chicken the next night to make these delicious French bread pizzas. Rotisserie Chicken French Bread Pizza
1 long French bread
8-12 TBS pizza sauce
1 breast (or equivalent) rotisserie chicken, pulled apart into pieces
6-8 black olives
Garlic Powder
Asiago cheese
4 oz thickly shredded mozzarella
Black pepper
Crushed red pepper
Dried basil and oregano
Cut the ends off the french bread so that you have a uniform loaf with no tapering at the ends. Cut in half and split open so that you have 4 rectangular pieces. For a healthier pizza, use whole wheat or multi grain batons. Spread some pizza sauce on each piece. Cover with the chicken, preferably room temperature. Add olives. I like to put the olives under the cheese for presentation purposes, but you can put them on top of the cheese if you like. Sprinkle generously with garlic powder. Shred some fresh asiago cheese all over the top, then add the mozzarella. Garnish the top with pepper, basil, oregano, etc. Put under the broiler about 2-4 minutes. Watch it carefully so it doesn't burn. You want the cheese to bubble and get some color to it.
Serve with beer and watch the football game, or dress it up with a Chardonnay and salad of baby spinach, cherry tomatoes, and marinated artichoke hearts.

What a great, easy dinner idea! It looks really delicious; when I buy a rotisserie chicken, I usually end up with half of it in the freezer. Now I have another way to use it!
