No fancy introductions needed here. If you've ever had real Southern Greens, then you'll know. You'll just know.
Greens
3 strips bacon, cubed (or ham or salt pork or sausage)
1 onion, chopped
5 cloves garlic, minced
1 can beer, minus 5 or 6 sips (hahaha)
1 cup chicken stock
1 lb. rinsed and cut collard, turnip, or mustard greens
1 TBS sugar
1 TBS cider vinegar
1 tsp Cajun seasonings
Several turns of fresh ground pepper
3-6 healthy dashes Louisianna hot sauce
Salt to taste
Brown the bacon in a big stock pot until crispy. Add a few TBS of beer to deglaze the pot, scraping up all the brown bits from the bottom. Add onion and garlic and saute for several minutes until soft.
Add beer and chicken stock and bring to a simmer. Add all the greens - they should fill up the pot. Cover and simmer for about 10 minutes. When the greens have greatly reduced in volume, add all the seasonings. Simmer with lid tilted for another 30 to 45 mintues or until soft, stirring occasionally.
Serve with cornbread, dipping the cornbread in the pot liquor.

We grew some greens a couple of years ago, and I admit I didn't exactly know what to do with them.
I love growing greens in my yard. We did an early fall planting of turnip greens this year.
This recipe works with mustard, collard, polk, and turnip greens. Some people like to cube the turnip bulbs and add that in too.

Ok, beer is definitely going in my next batch of greens!! And I just so happen to have some pulled pork in the fridge to go with it.
