Quick Beans and Rice

Did you know that you are $3 and 5 minutes away from a quick, hearty dinner? Add sliced oranges as a healthy dessert.

Quick Beans and Rice

1 can organic pinto beans

1 package microwave instant brown rice

Drain half the liquid from the beans and replace with spring water. Bring to a simmer in a small pot. Microwave the instant rice according to package directions. My favorite is Trader Joe's frozen brown rice that takes 3 minutes in the microwave. I also like Uncle Ben's brown rice in a packet that takes 90 seconds to cook. Serve the beans over the rice.
