Salad

We are fortunate enough to live in an area that fresh fruits and vegetables are available year-round. And what better way to greet the new year than with a healthy appreciation for the world's most perfect foods?

Salads don't have to be rabbit food, health food, diet food, bland, or boring. And salads do not need to be drenched in dressing to taste
good. Fresh romaine is crisp and crunchy. Fresh tomatoes are juicy and flavorful. For extra flavor, try adding small chunks of cheese, salty olives, hearty sliced almonds, sweet raisins, earthy mushrooms, spicy peppers...you are limited only by your own imagination. Start the new year healthy and stay that way!

Salad

1 handful Romaine lettuce, rinsed and chopped
1 Tomato, wedged
3-4 olives
extra sharp white Vermont cheddar, in small chunks
no dressing! - it doesn't need any!

Place romaine in a bowl and top with the rest of the ingredients. Serve with apple slices and a glass of chilled Pinot Grigio.
