Beans and Rice with Spinach and Mushrooms

This is a combination of two of my favorite recipes: Quick Beans and Rice and Sauteed Spinach and Mushrooms. It makes a great lunch or dinner paired with a glass of pinot grigio or a blonde ale.

Beans and Rice with Spinach and Mushrooms

1 can organic pinto beans
Leftover Sauteed Spinach and Mushrooms
1 package microwave brown rice

Drain half the liquid from the beans and replace with spring water. Bring to a simmer in a small pot. Mix in leftover spinach and mushrooms. Simmer until heated through.

Microwave the instant rice. Serve Beans, Spinach, and Mushrooms over rice. Enjoy!
