Whenever I make Barbeque Pork Roast, I always have left overs. Roast Pork with Black Beans and Rice is a great, healthy recipe for the leftovers. You can substitute the any meat you like for the pork if you don't have any on hand.
Roast Pork with Black Beans and Rice
pork, roasted and shredded
1 can black beans
1 onion, chopped
1/2 green pepper, chopped
2 stalks celery, chopped
4 cloves garlic, minced
1 handfull fresh parsley, chopped
1 TBS oregano and basil
brown rice
Cook brown rice according to package instructions. I like to use instant microwave brown rice.
Drain beans and replace liquid with fresh water. Warm beans in a pot to simmering.
Saute onion, pepper, and celery until soft. Add garlic, parsley, oregano, and basil and saute 3 more minutes. Add pork and mix well to coat.
Add pork mixture to beans and fold together. Serve over brown rice. Garnish with chopped tomato, onion, or sour cream.
